Sweetcorn Patties

These are a delicious addition to any party buffet, and are very simple to prepare.
Serve with sweet chilli sauce.
16oz frozen corn, thawed
1 onion chopped finely
1tsp curry powder
1 garlic clove, crushed
1tsp. coriander powder
1 small cup spring onions chopped
3tbsp plain flour
salt, oil(5tsp).
1. Mash the drained sweetcorn lightly.
2. Add  the remaining ingredients except for the oil, one at a time stirring after each addition.
3. Then, make patties
4.  Heat a griddle, cook the patties for 4 to 5 minutes, turning each patties once,( add little oil) until    golden brown and firm.

Tip: Make the patties a day ahead and store it in the refrigerator and cook the next day when the guests arrive.
